Easy Slow Cooker Herbal Lemon Chicken
I love cooking with fresh herbs from the garden, almost as much as I love herbs that are easy to grow.
Enter Rosemary. A versatile herb that has a long history as a seasoning, has been used in spiritual bathing and can also be used as a smudge just like sage.
Here, We've combined it with free range chicken and a few lemons for an easy slow cooker weeknight meal.
2 Large Lemons
1 Diced Onion
2 TBSP Olive Oil
A Few Fresh Sprigs Of Rosemary
8 Medium Sized Red Potatoes
4 Boneless, Skinless Chicken Breasts
Salt and Pepper to Taste
A Slow Cooker
Take out your slow cooker and add the olive oil, and diced onion to the bottom.
Quarter your potatoes and pop them on top of the onion.
Add the chicken on top of the potatoes.
Add the fresh rosemary.
Cut the first lemon and squeeze the juice into the pot, over the food. Then cut the pieces up and add them to the pot.
Slice the second lemon and add the parts to the pot.
Cover and cook on low for 4 hours.
Top with salt and pepper to taste.
